What the #$%^!!!

So.....Bo & I were woken up Sunday night/Monday morning at 2:30am to someone FRANTICALLY ringing our doorbell.  We didn't recognize the truck in the driveway so Bo asked who was at the door without opening it.  The woman said thru the door, "Your fence is on fire in the backyard!" 

Bo & I ran to the back window and sure enough, our fence was on fire.

Bo was able to put the flames out pretty fast.  Turns out the ashes from the pig cooker that were cool Sunday morning when Bo dumped them back there, ended up relighting after the long hot day & windy evening.  That's what we assume happened anyway.

Bo & our neighbor fixed the fence by lunch time.  I'm so thankful for the couple that drove by that night.  No telling how bad it couldn't gotten by the time we woke up!

Papi's 60th birthday party: Day 3

Saturday, 3/26/11


We started the day off with Izzy's t-ball game & then came home to start the fire on the pig pit.  My dad showed up w/ Jaime to wire the pig on the spit & they loaded it onto the fire.

My neighbor made my dad a "steering wheel" for the spit since they never made an automatic turner.  My dad attached the wheel & took it for a spin.

My dad knew we were cooking a pig for his birthday but wasn't expecting all the people that came because it was a Surprise Party.  He was excited to see all his friends show up...former co-workers, friends & family from Harwood & church group friends.  It was neat to see his reaction as all these random people started showing up.  He was confused as to why these people were walking up to him & then would realize that we invited them.

Time to eat!  Besides the pig, we also made fajitas for the folks that were too freaked out the eat the pig.  We also had traditional Puerto Rican food like arroz con gandules & escabeche de guineos. 

Valerie & I made 2 domino cakes because my dad LOVES playing dominoes.  Connie made the cupcakes w/ the Puerto Rican flag & others w/ banana chips on them.  The middle row of cupcakes spells out "Frankie" in fondant.  We put 60 candles on the 2 cakes!  It was too windy on the patio so we had everyone come to the garage to see him blow out the candles.

At the end of the night, the kids played, one group was playing poker & another group played dominoes.

All in all, everyone had a blast & my dad was truly surprised to see everyone.

Izzy's 1st t-ball game

Izzy's first t-ball game was bright & early Saturday morning at 9am.  She has 3 friends on her team so it made it easier for her to want to go out & play.  One parent has to be w/ their kid when they're on the field to encourage them to run after the ball.  Ends up being a really packed infield!  Izzy would run to the ball (never got it though) but didn't really fight for it.  This is her 2nd season to play.

Papi's 60th birthday party: Day 2

Friday, 3/25/11

Happy Birthday Papi!  We had everyone over tonight for dinner since today is my dad's actual birthday.  Val & her family came early so we could make the birthday cakes for Saturday.  Later that night, we had ribs, sausage & corn for dinner.  Bo & the guys chopped wood & got the pig roaster together to get ready for the pig roast tomorrow.

Papi's 60th birthday party: Day 1

Warning: This post will contain pictures of a dead pig carcass.  Not the kind you find on the side of the road but a fresh dead one you get from a butcher.  If that bothers you, don't continue to the pictures.  You've officially been warned.  :-)

My dad is turning 60 on Friday, 3/25 so we're having a traditional Puerto Rican bash for him Saturday night & we're roasting a pig!  3 of his siblings flew in from Connecticut & Pennsylvania to surprise him. 

Julie, Eddie, Tia Cuca & Tio Jaime drove to Brookshire to J&J Meat Packing to pick up the pig.  Later that night my family came over to prepare the pig.  Cuca & Lydia prepared the dry rub  & garlic marinade.  They mashed up 11 whole heads of garlic w/ recao...basically a Puerto Rican cilantro but much more flavorful.  You can imagine how delicious my house smelled!

Outside, my dad prepared the pig.  You know it's gonna be a fun meal when the utensils you use to prep are a hammer & a meat cleaver!

They took all the wet & dry mixes & slathered it all over the pig, inside & out.

Bella & Izzy watched and luckily didn't get freaked out!

Even Fancyboy watched...Hope he didn't think he was next!  ;-)

Final rub down.  After this, they wrapped it up in a plastic bag & put back in fridge to stay until Saturday.

Izzy's school field trip

Izzy's school had a field trip today to a local landscaping company.  Seems like they specialize in koi ponds & the kids had a blast touching all the water.  Not one of the best field trips I've ever been on, but it's for 4 year olds so I can't really complain!  :-)

Maggie, 8 months old

Here are a few stats about our little Maggie Pie...
  • Tipping the scales at about 20 lbs!
  • Still rocking back/forth on knees but still not crawling forward
  • Can almost sit up from a laying down position
  • Loves eating or tearing up magazines
  • Still no teeth!
  • Watches Izzy in awe & is just flat out amazed with everything she does
  • Needs to learn to sleep in at least until 7am.
You're such a good baby Maggie!  We love you!!!
