Bacon Wrapped Picante Chicken Bombs

Who else is getting excited for the Big Game coming up in a few weeks?!?!  We've got a house full of cheerleaders around here, so we like to cheer for our favorite teams!  "What color team are we going for daddy?"  That's how the girls decide! ;-)  Did yall see that particularly exciting game this weekend?  1 second left...pulling it out in that last second...OT...touchdown in the first few minutes of OT!  Talk about excitement!


For me, the excitement is always revolved around food!  I love planning fun menu items that are full of flavor & easy to eat!


I went to Fiesta to pick up some El Yucateco & Coca-Cola to make some game day menu items.  Right now at Fiesta, you can even buy (2) Coca-Cola 1.25 Liter products + (2) El Yucateco Hot Sauce products and get $2.00 off your deli/meat order.  More food...SCORE!

My go-to menu items for game day are always finger foods.  What's easier than filling up your plate with a little of this & a little of that?!  This time, I wanted our plates to be full of sabor y picante.

Bacon Wrapped Chicken Bombs
Ingredients:
cubed chicken breast
1 package of bacon
El Yucateco Hot Sauce

Directions:
Preheat oven to 350F
Cube chicken in small appetizer sizes; Add to a resealable bag
Pour El Yucateco Hot Sauce over the cubed chicken (I used 1/2 the bottle)
Squeeze the chicken through the bag coating all of the chicken; refrigerate at least 30 minutes
Remove chicken from fridge
Cut the bacon slices in half
Place 1 piece of chicken on 1 half of bacon & roll
Place seam side down onto a foil lined baking sheet
Bake for 30 +/- minutes (depending on how thick your chicken is cut & how crispy you want your bacon.)

I also made a ranch dip with sour cream & dry ranch mix, added a few tablespoons of El Yucateco green Hot Sauce, mixed it up well & served as a dip for the Chicken Bombs.

Always nice to pair a favorite meal with an iced cold Coca-Cola.  It'll cool your mouth off & then you're all set for a night of football!

Easy Movie Themed Snack: White (Chocolate) Trash Mix

We just finished our last weekend of the kid's winter break & that meant it was time to take down the Christmas decorations.  Well...most of them.  Taking the ornaments off the tree & having Bo drag it outside to chop it up left quite the mess!  Once we got that cleaned up & boxed up the ornaments, it was time to relax!  I mean, a girl can only be expected to do so much in an afternoon! ;-)


Joe Dirt 2 was on the movie menu tonight, as it was recently released by Sony Pictures.  The first one was so funny, so we wanted to see where life would take good ol' Joe Dierténext.  PLUS...I needed to see what happens next in one of the greatest on screen love stories of all time...Joe & Brandy.  They're right up there with Fred & Wilma, Sandy & Danny, Rose & Jack, Bella & Edward, Fiona & Shrek...you catch my drift!  ;-)

We got some snacks at Walmart so I could make some White Chocolate Trash Mix.  We got a box of Orville Redenbacher Pop Up Bowl popcorn, little containers of milk chocolate & peanut M&M'S® chocolate candies and my ever beloved Coca-Cola!

Once home, I also gathered some pretzels, caramel, sprinkles & white bark coating and got to work!

Step 1:  Pop Orville Redenbacher popcorn; Melt the white bark to package directions; Pour white chocolate onto popcorn
Step 2:  Mix in M&M'S® chocolate candies & any other mix-in you'd like
Step 3:  Stir until well coated
Step 4:  Pour mixture onto wax paper; add sprinkles while chocolate still wet
Step 5:  Pour caramel over popcorn mixture
Step 6:  Let dry to your liking & ENJOY!!!
(*NOTE* Remove the unpopped popcorn kernels BEFORE you pour popcorn into the mixing bowl!!!)

Joe Dirt 2 was actually really cute & funny!  I loved all the references to other movies, along with referencing some original Joe Dirt characters from back in time.  This was just the break we needed from cleaning up on a chilly day!

Happy New Year 2016!


Hello....it's me....

Aaaah, that never gets old!  Just don't ask my husband & kids! ;-)  (Future Lauren, just in case you're reading this 20 years from now, remember this is a line from an Adele song.) :-) 


Happy new year everyone!  I hope yall got to enjoy some time away from schedules, school & work and were able to spend your time relaxing with family.  We had a nice 2 weeks off...we ate a lot, we visited family, we went to the ballet, waited for Santa & got to bring the new year in together!


Courage is what it takes to stand up and speak; courage is also what it takes to sit down and listen.
This is my word for 2016.  Courage can be applied to your life in so many ways...as a wife, a mother, decision making, stepping out of your comfort zone, willingness to open your mind to something new, etc.  I'm really looking forward to seeing what 2016 brings for our family & how I can become better in every title I hold.
